Last week saw the launch of a new selection of cheese in the city, courtesy RRO; The Guide presents a crash course for connoisseurs and dummies. Now's the time to say Cheese


FOR THE CLASSIC
Brie: This is a variety of soft milk cheese named after the French region from where it originates. It has a slight gray tinge.u00a0Emmenthal or Swiss cheese: It's a yellowish hued, medium-hard cheese, which originated from Emmental, Switzerland. Parmigiano-Reggiano or Parmesan cheese: This is a hard, granular cheese, which is named after the producing areas in Italy near Parma, Reggio Emilia, Modena and Bologna. The cheese is made from raw cow's milk and it is cooked, not pressed.


Stilton

FOR THE ADVENTUROUS
Mango and Ginger White Stilton: White Stilton is a creamy and tangy cheese by itself but needs an addition of certain elements such as mango and ginger to complement its flavour. It is best consumed at breakfast or as dessert.u00a0Pepper Chèvre: This spicy cheese is basically pepper cheese topped with red and green peppercorns, while the sides are coated with ground pepper.u00a0Gorgonzola: It's an Italian blue cheese made from unskimmed cow's milk and tastes salty. It was originally made in Gorgonzola, Milan but other localities dispute the claim and today, it is made in the Piedmont and Lombardy too.

Gouda & Spicy Nuts: Gouda is a yellow Dutch cheese with a smooth caramel sweetness, which works wonderfully with spiced nuts.u00a0Camembert & Cantaloupe: This French cheese has a creamy, smooth texture. Its rich flavour compliments the sweet and juicy cantaloupe.u00a0Ricotta & Honey: This soft Italian cheese goes well with honey, or serve it on toast or crackers for a sweet, creamy treat.u00a0Parmesan & Prosciutto: Parmesan is an Italian hard cheese that goes well with any food. Its saltiness is a great foil when paired with the rich, smooth flavours of Prosciutto. Brie & Green Apples: This French cheese works wonderfully with tart and fresh green apples.
Cheddar & Cherries: Cheddar has English origins and works well with fresh cherries.
