She was upset and asked me to stop meeting her. After we stopped talking, I realised I was in love with her. What should I do? How should I convince my mother? I am 25.

You are 25 and your mother can't stop you from meeting the girl. Grow up guy and take a stand. You cannot be a mamma's boy all your life. Your mom has her reasons and so do you.
