Mallu Drumstick Soup
Place of origin: Kerala
Inspired by the versatile yet underrated drumstick, the comforting soup comes topped with fried moong daal and crispy onions. With Keralite cuisine staples like coconut oil, mustard seeds, curry leaves and tamarind, it can't get more mallu than this.

Hungarian Goulash
Place of origin: Hungary
Probably one of Hungary's most famous dishes and the only soup on Imbiss' menu, the goulash includes a thick beef (buffalo) broth as the base that is cooked with potatoes, carrots, onion and celery. Seasoned with smoked paprika, sweet paprika and pepper, it also makes for a quick, wholesome meal by itself.

Rampuri Nalli Shorba
Place of origin: Lucknow
Start your Nawabi meal with this lamb marrow soup flavoured with lazeez-e-taam spice mix, a combination of spices originating from Lucknow. The soup is enriched using the steeping method, where the marrow bones and spices are slow-cooked over a period of eight hours to extract maximum flavours.

Terlingua Chili
Place of origin: Texas
Available in vegetarian and non-vegetarian options, the Texan stew with tender chunks of buffalo meat, slow-cooked onions and chilies, topped with mixed cheese, is inspired from the first Chili Cook Off in Terlingua, Texas, in the late 1960s.

Chasu Ramen

This is a bowl packed with pork stock, bacon, braised pork belly, bean sprouts, marinated soft boiled egg and scallions along with homemade ramen noodles. Vegetarians can opt for Green Curry Katsu made with a mix of veggies, green curry paste, coconut milk and ramen.

Penang Laksa

Laksa is to Malaysia what curry is to India. Cooked with coconut milk, the hot and sour broth is served with egg or thread noodles, bean sprouts, mushrooms, greens, and tamarind that gives it a tangy twist. Also try the healthy Vietnamese Pho, a clear broth, influenced by the French Consomme.

Firehouse Chili Soup
Place of origin: Mexico
Featuring tomato concasse, grilled chicken, black beans, bell peppers, sour cream and tortilla chips, this spicy-and-sour concoction derives its Mexican flavours from the smoky chipotle sauce used in the recipe.
