Now and again, Gupta is known to mix and match flavours. Among his recent experiments is the mayo cheese chilli toast. This one's a scrumptious medley of bread, toasted or grilled, with mashed masala potatoes, mixed with shredded capsicum and lightly fried onions and green chilli. On top of it goes a plump layer of cheese, which is then heaped with a generous helping of mayonnaise. He's not done with cheese yet. He then adds some shredded cheese on top and peppers it with chilli flakes. "I keep experimenting with food. This particular mayo sandwich was a hit from day one, especially with college students. The way I combine the mayo with the masala potatoes and chilli flakes, is what makes the snack stand out," says Gupta.
For those with an infinite appetite for mayo, he doesn't mind adding some between the breads, too. The sandwich, priced at Rs 55, is served with both green and red chutney.
