Four home cooks come together this weekend to bring you a giant feast of the porcine variety
Candied Bacon Ice Cream
Here's a pop-up every pork-loving individual needs to be a part of. On Sunday, four city-based home cooks - Madhumita Pyne, Gitika Saikia, Rhea Mitra-Dalal and Subhasree Basu - will be presenting a varied menu showcasing traditional and funky pork dishes from India and around the world.
Saikia of Gitika's PakGhor is known for promoting Northeastern cuisine through hosting meals at home and elsewhere. She shares with us how the idea to host this 'porkstravaganza' came about.
Naga Pork
"The four of us were casually chatting on WhatsApp recently. We all love pork and since a pork-y pop-up had not been done before, we decided to get cracking. All we want to do is spread happiness among pork lovers," she says. At this event, she will be presenting dishes such as Pork Guti Alu, Pork Pickle, Pork Black Sesame and Naga Pork (latter two served with sticky rice).
Pyne, who is better known as the Insomniac Cook on various social media platforms, usually hosts pop-up meals at her Malad home. From her roster, you can dig into succulent Pork Ribs, served with garlic mash and veggies, as well as Pulled Pork Nachos. There's also Candied Bacon Ice Cream and Goan Chouriço Jam to look forward to.
Gitika Saikia
Speaking of jam, even Mitra-Dalal will be serving her version, made with bacon, in addition to bacon brownies and dishes like Choriz Pav, Pork Toddywala (served with pav), and everyone's favourite, Pigs in Blankets.
Basu of Hungry Cat Kitchen will present her Pork Pot Pie, featuring lots of meat (but obviously), Granny Smith apples, celery and cranberries, all baked with a light-as-air filo crust. Other dishes from her pantry include Jacket Potatoes with BBQ Flavoured Pork and Cheese, and Pork and Fennel Meatballs.
