Life has come a full circle for Jaibir Kohli as far as his childhood association with chef Ajit Kumar Mallick is concerned. The latter used to head the kitchen at Ivory House, an Asian restaurant housed in Hotel Midtown Pritam in Dadar East, which Kohli's family owns. As a child, Kohli would relish the chef's dishes.
But the restaurant shut down many years ago, with chef Ajit leaving to ply his trade with different embassies abroad. Then, he returned to Mumbai during the lockdown and got in touch with Gogi Singh, Kohli's father. "When my dad told me, âOh, you know, chef Ajit is back in town,' I was like, âOh my God, that's awesome.
We should definitely do something with him,'" Kohli tells us. And thus was born Gingko, a brand new pan-Asian cloud kitchen that operates out of the large kitchen at Midtown Pritam. The menu includes dishes like tom kha prawn soup, Thai basil prawns, chicken jungle curry and Beijing mushrooms. Try them out to find out what it was about chef Ajit's cuisine that made him Kohli's favourite when he was growing up.
