One of the city's best fine-dining restaurants, Olive Bar & Kitchen inu00a0 Bandra has a new chef. Born in Hong Kong to Spanish-Irish parents, and later educated in Australia, Justin Dingle says his cooking style is a melting-pot one that's fragrant with the diversity of culture.

What can Mumbai's foodies expect on the new menu?
A new style of cuisine with new world ingredients and Mediterraneanu00a0 overtones. The emphasis is on fresh, bold and complex tastes and presentations.

An Indian dish you dig...?
I love Butter Pepper Garlic Squid the texture, the freshness of theu00a0 squid and the combination of flavours. I also enjoy typical Rajasthani curries, but it's the Paan that tops the list. What an unusual street digestive snack. The combination of flavours blows my mind each time I eat it.

What makes India special enough for you to work here?
This is where I fell in love with my wife Diya.

The one dish you make well and would want us to try?
It would be the crispy whole loin of suckling pig with trotter jelly, green peas and Wasabi mash. It balances flavour and texture brilliantly.
