A glass of freshly prepared Chaas will whet your appetite for the feast that follows. Start off with an appetiser of Tabakh Maaz (slow-cooked mutton ribs), served with Mutton Shorba and Muji Chetein (radish chutney).

For the main course, you can sample dishes like Rogan Josh, the aromatic mutton stew that is a mainstay in a Kashmiri wazwan; Matschgand, which has mutton kheema balls in a gravy; and Maaz Yakhni, a broth of spices and yoghurt with mutton. For dessert, dig into the Kong Phirni, made by cooking semolina in milk, saffron and dry fruits.
