The pull of jackfruit
Vegetarians, here is an alternative to the much-hyped pulled pork dishes. The Vegan Pulled Jackfruit Burger comes with tempered curry leaves, coconut, fried cashew nuts, and a plum and raw mango slaw. "Jackfruit can be used raw as well as ripe. When using the fruit, we decided to make the dish vegan, and add some South Indian influences," says Sean Pereira, F&B manager.

We turned it into a burger, stuffing a waffle infused with parmesan and chives with buttermilk brined fried chicken," says Akshay Kale, executive chef. This burger comes served with chimichurri — red wine vinegar, tomatoes, rocket, sriracha mayo and grilled onions.
