Chocolate Streaked Satinu00a0
Ingredients
2 cups orange juice, chilled
2 cups cranberry juice, chilledu00a0
4 scoops vanilla ice cream
Chocolate syrup as required

Method
Line four glasses with chocolate syrup in a pattern.
Process orange juice and cranberry juice with vanilla ice cream in a blender until smooth.
Pour into the chocolate-lined glasses and serve immediately.
Avocado and Chicken Salad
Ingredients

1 chicken breast, boiled, thinly slicedu00a0u00a0u00a0
1/2 bunch iceberg lettuce, hand tornu00a0
2 stalks celery, thinly slicedu00a0u00a0u00a0
2 eggs, boiled, slicedu00a0u00a0u00a0
1 medium tomato, slicedu00a0u00a0u00a0For dressing
4 tbsp cheese spreadu00a0u00a0u00a0
White pepper powder to tasteu00a0u00a0
4 tbsp fresh creamu00a0u00a0u00a0u00a0
2 tbsp parsley, choppedu00a0u00a0u00a0
6-8 garlic cloves, choppedu00a0u00a0u00a0

Method
Peel, halve, de-seed and thinly slice avocado.
For dressing mix cheese spread, white pepper powder, fresh cream, parsley, garlic and salt and set aside.
Make a bed of iceberg lettuce leaves on the serving dish. Alternately arrange the chicken slices, avocado slices and celery, egg slices and tomato slices.
Pour the dressing over the salad and serve immediately.u00a0
Prawn and Cinnamon Brown Riceu00a0u00a0
Ingredients
300 gm prawns, peeled and deveined
11/2 cups short grain brown rice, soaked
1/2 tsp cinnamon powder
2 one-inch sticks cinnamon
4 tbsp olive oil
10 garlic cloves, chopped
4-5 shallots, chopped
1/4u00a0tsp white pepper powder
Salt to taste
1/4 tsp dried mixed herbs
1/4 tsp red chilli flakes
Method
Heat the olive oil in a deep pan; add the cinnamon and saute for half a minute. Add the garlic and sautu00c3u00a9 till lightly browned.u00a0
Add the shallots and saute till translucent. Add the drained brown rice and continue to saute for one minute.
Add the cinnamon powder and white pepper powder and mix well.u00a0 Add four cups of water and salt and bring to a boil.
Cover and cook over medium heat till half done. Stir in the prawns, mixed herbs and chilli flakes, cover and cook till both the rice and prawns are done.u00a0u00a0
Serve hot.
Strawberry Panna Cotta
Ingredients
1 cup milk
1/4 cup sugar
1 tbsp unflavoured gelatin
1/2 cup strawberry crush
2 cups cream
u00a0u00a0u00a0u00a0
Method
Boil milk with sugar in a deep pan. Cool it down to room temperature.
Soften gelatin in four tbsp of hot water and stir it into the milk.
Add the strawberry crush and cream and mix well.
Pour into eight ramekins (small individual bowls) or moulds and place in refrigerator to set.
Serve chilled.
