There’s a new cocktail equipment in town that blows a flavourful and aromatic bubble over your glass. We decided to check it out

Brosmary

The bar top at The Little Easy has all the essentials needed to make a cocktail: a spirit bottle, shakers, stirrers, mixers, raw ingredients and a coupe glass. There is one odd addition, however - a bright-green-coloured toy gun. We are told it shoots bubbles. Not soap ones though.

Vishesh Anil Shah, owner of the Bandra watering hole, had ordered the gun last March from the UK but the lockdown marred his plans to serve flavour blaster cocktails using the Bubble X edible solution. Bar manager Sarfaraz Khan begins by mixing The Brosmary, a heady gin and Campari concoction with orange juice, egg white and lavender maple syrup. He pours this into the coupe but doesn’t serve it just yet. He loads the canister in the gun with a burnt rosemary flavour and activates it by clicking on it three times to let some vape out. Next, he dips the nozzle of the gun into a bubble rosemary solution that comes with the kit and aims it atop the glass and a big bubble lands on it like a snow globe. It wobbles.

When we hold the glass for nosing and burst the bubble with a stirrer, the aroma of burnt rosemary fills our senses. “While the bubble was enclosing the glass, it was infusing the flavour into the drink,” Shah explains, adding that 2 ml of flavour allows making up to four cocktails.

For now, the bar is serving cocktails with four flavours —rosemary, ginger, mixed berry and grapefruit — paired with gin, vodka, Scotch and dark rum respectively. The cocktails are priced between Rs 600 and Rs 700.

The next cocktail we try is Ballantine’s day, a Scotch and absinthe combination paired with red wine, passion fruit, basil leaf and cinnamon stick. The bubble has a mixed berry flavour. We are not sure if the berry will sweeten the drink too much but turns out, the spirits are holding fort beautifully. This is a must-try.

While the gun sometimes needs a few trials before the bubble sits still, we must warn you that bubbles do burst, and while going from the bar to the table, you better be prepared with your phone cameras to shoot at sight before taking that sip packed with a flavourful and aromatic burst.
