Beyond dal baati
Rajasthani food is more than just dal baati! For example, have you tried its yummier cousin, dal baafla? Unlike baati, which is roasted, a baafla is fried, which makes the texture even more interesting. That and much more can be found in this new cookbook, Relishing Rajasthan, which features time-honoured “hidden gems” from Rajasthan. Bad news for lal maas lovers though, chefs Sameer Gupta and Pratibha Jain put together a cookbook that is vegetarian.
There’s much to be discovered still. For example, a recipe for a personal childhood favourite of this writer — khaariya paired with Athane ki mirchi or even some lesua ka achaar. For the cold winters, try some bajri ka kheechda or makki ki ghaat, dishes that are incomplete without ghee and some curd. And for some sabzis that have little to no actual sabzis in them, try haldi ki sabzi, pithod ki sabzi, or papad-badi ki sabzi. Lastly, if you’ve squeezed every recipe out of this book, this writer would personally recommend — and hear this with an open heart — gulab jamun ki sabzi. We promise you, you haven’t had something like this before. It isn’t one of those weird Instagram combos. The curry has existed long before Instagram came around. Give it a try, you won’t regret it.
