It is usually relished during festivals or other occasions like a family get-together or during celebrations.

Delicious and Creamy Kesari Phirni by Chef Ali, The Old Delhi
Prep Time: 26-30 minutes
Cook time: 1-2 hours
Ingredients:
Rice 1/4 cup
Full-fat milk 4 cups
Sugar 1/2 cup
Saffron 1/4 tsp
Cardamom powder 1 tsp
Chopped nuts (almonds, pistachios and cashews) 2 tbsp
Ghee or unsalted butter 1 tbsp
Edible orange food colour
Method:
1. Wash the rice and soak it in water for over 30 minutes. Drain the water and grind the rice to a coarse paste in a blender.
2. In a thick-bottomed pan, heat ghee or unsalted butter on medium heat. Add the rice paste and cook for 3-4 minutes or until the raw smell clears out.
3. Add milk to the pan and stir well to prevent lumps. Cook on medium heat for about 15-20 minutes. Stir occasionally until the mixture thickens.
4. Add sugar, saffron strands and cardamom powder to the pan and mix well. Cook for another 5-7 minutes or until the sugar dissolves completely.
5. Add the chopped nuts and edible orange food colour to the pan and mix well.
6. Remove the pan from the heat and let it cool for 5-10 minutes.
7. Pour the phirni into individual serving bowls and garnish with chopped nuts and saffron strands.
8. Refrigerate the phirni for at least 2 hours before serving. Your Kesari Phirni is now ready to be served. Enjoy this delicious and creamy dessert with your family and friends.
