Pesto-Marinated chciken or Mushrooms at Basilico
Basilico, modelled after the European-style bistro, offers four vegetarian and two non-vegetarian pizza by the slice options. Veggie options include the classic Margarita (Rs 240), the Pesto Mushroom Scamorza (Rs 280) that has mushrooms marinated in pesto scattered over more pesto sauce and smoked mozzarella, and the Veg Dream (Rs 290) (pictured here).

Non-vegetarians have the Pesto Chicken Scarmoza (Rs 320) and the Minced Lamb (Rs 370) with roast lamb, caramelized onions, plum tomatoes and mozzarella to choose from. The pizzas are cut from a 14" regular pizza base and served 'thin and crispy'. You can, however, request to have your order made from "95% wholewheat", or 'create your own pizza' for an additional charge.

Sliced chicken loaf on the Chef's Special at Aaron's in malad
Named after its proprietor, Aaron Irani, whose dad, Jehangir, owns the famous A1 Bakery in Bandra, this tiny bakery and cafe in Malad introduced the pizza by the slice option on their menu around two months ago. Called the Chef's Special, the 8" pizza slice is topped with bits of sliced Chicken Loaf that's made from minced chicken seasoned with herbs and baked inside a loaf tin. Vegetarians will have to make do with their sandwich, dessert and puff offerings, though the management assures us that there will soon be a vegetarian pizza by the slice option. Non-vegetarians looking for something other than pizza can opt for the Egg Stacker sandwich (Rs 35) made with wholewheat bread that boasts a hearty filling of egg, cheese and chicken salami. For vegetarians, there's the Spinach and Cheese, also done with wholewheat.

The 'biggest' pizzas by the slice in town at Ray's in Bandra
The Pizza By The Slice was created for the New Yorker: Someone always on the go. This is also why if you drop by this tiny cafe in Bandra and ask for any of their pizza-by-the-slice options, you have the guarantee of your pizza being served in under-10 minutes, about the time it takes for the cheese to melt. The three-fourth-par-cooked pizzas are 'cut' from a 16" 'regular' pizza that makes it easier for you to "fold and stroll" or eat on the go.

Options include Original Cheese (Rs 90), Mumbai Masala (Rs 95) that's topped with a generous sprinkling of an Indian spice blend made with over five spices, the Grilled Chicken (Rs 145), the Ray's Special (Rs 145) with pepperoni and the Prosciutto (ham) (Rs 170). All options can be made using a wholewheat base as well.

These guys offer pizza by the slice in desi options that paneer tikka, chicken tikka, and the Chicken Schezwan (Rs 130) that has chunks of spicy Schezwan Chicken, sprinkled with spicier green chillies and green onions over a still spicier Schezwan sauce. The Vegetarian Gourmet pizza (Rs 110) with corn, capsicum, black olives, bell peppers and onions is a popular option.

You can choose from a variety of non-vegetarian and vegetarian toppings at any of the Food Factory outlets and kiosks all over the city. The 9" slices can even be "made Jain" on request (no onions and garlic).
