It's been that kind of a longish phase where the restaurant industry has been facing testing times. However, Gresham Fernandes, chef and co-owner of Salt Water Cafe, has a refreshingly stoic approach. “All this while, I have come to this kitchen and cooked. I am grateful for that,” the lead chef reveals.

When we dropped by the neighbourhood cafe on Chapel Road in Bandra, we noticed that the 13-year-old space had donned new soft green paint and a cleaner look. Fernandes, who has grown up in the suburb, has made additions to the menu which he calls a gentle elevation and not a complete overhaul. “The regulars won’t do without their favourites, right? We are looking at produce sourced from local markets, and seasonal ingredients. At the end of the day, this is the food that makes sense to serve. We are not an Asian restaurant but in many elements, I have added that umami that we are all craving when we step out to eat after a long time.”

We know that Fernandes is a stickler when it comes to no-wastage of food. We ask for smaller portions and the first sampler is hummus (Rs 330) with an Asian twist of togarashi. We dig this with sour dough and crisp veggies. The togarashi gives the hummus a spicy, toasty lift. The burrata, on the other hand, (Rs 400) comes topped with fresh and locally sourced tomato and charred grape. Topped with seeds and weeds, the taste is a burst of local flavours. We love the sourdough that has chunks of grapes in its bite.

Our favourite, and one that we cannot get enough of even if our stomachs are full is the avocado wrap (Rs 460) with aubergine sambal and feta. It is the pampering we want to feel when we step out to eat in these times.

Since we are too full for dessert, Fernandes packs us a specially-made Danish to take home from their new bakery. Next morning, we indulge in a sinful slice that's been drizzled with caramel and baked with sliced ​​almonds, and accompany it with a strong cup of Andromeda blend coffee by Dope Coffee Roasters (Rs 895) that is also available at the cafe.
