Very Peri, served haute: City based food outlets give a flavourful touch to Pantone's colour of the year

If you can’t get enough of the periwinkle blue-meets-lavender mauve shade that is 2022’s Pantone’s Colour of the Year, we’ve curated a list of F&B fare across the city that pay it a flavourful homage

Baked inspiration

Inspired by Pantone's promise of Very Peri - the colour matching company's shade for 2022 - Flour Power, a Chowpatty-based baking and confectionery delivery kitchen by Ayesha Mehta decided to bring in some much needed "newness of colour" to the year. The Le Cordon Bleu-trained head chef and owner of the business has on offer, what she calls, ‘a capsule collection' of treats.


New York style bagels

"After two gruelling years due to the pandemic, we can all agree with the need for newness and colour. Through my creations, I hope to keep this vibe alive, and use this beautiful colour to bring joy to one's daily life," shares Mehta. And so, inspired by her love for tie-and-dye, she created the marbled loaf bread (Rs 150) that has almost psychedelic-seeming swirls of Very Peri, and a darker purple shade (both, using food grade colours) along with the neutral, off-white bread colour. This is achieved by carefully blending and twisting the tricoloured dough together before baking. A perfect example of the New York-style, first-boiled-then-baked Jewish bagel is the pack of six Very Peri food coloured breakfast bagels (Rs 600) that are topped with black and white sesame seeds for a nutty finish to the desired chewy texture of the bagel. Also on offer are the Very Peri mini blueberry baked cheesecakes (Rs 2,500 for 4), with their tops slathered in a gooey, in-house made blueberry jam.

Blueberry gelato

Almost perfectly decoding the Very Peri shade is this icy cool blueberry gelato (Rs 170 for a double scoop, Rs 690 for 500ml and Rs 1,350 for 1 litre tubs) by the Worli-based Cremeyum Creamery. Made from blueberries that are imported from Mexico and sans added colour, emulsifiers or artificial flavours, this frozen treat is also available in keto- and vegan-friendly iterations. We learnt that a frozen yogurt version of the gelato is in the works. The creamery has even introduced a short rhyme in honour of the gelato and the Very Peri shade. It goes, ‘Smooth, creamy and filled with berry/The rich colour is truly Very Peri/And it gets you in a mood happy and merry!'

Cabbage match


Chicken basil dim sum

Getting its colour from an unusual source i.e. purple cabbage, is this quartet of chicken basil dim sum (Rs 525) from The Game Palacio restobar at Bandra. This Cantonese-style har gow dim sum is made using a skin of wheat dough that has been coloured by the water extracted after blanching purple cabbage in it. A fragrant and spicy chicken-basil filling plumps up these tasty morsels that are served with a side of tangy scallion sauce.

Rice and shine


Purple rice

A visual delight, the Purple rice at Bandra's House of Mandarin draws its inspiration from both the Insta-popular Asian blue rice trend, as well as from the restaurant's signature colours. Having a subtle and delicate flavour, this dish made with white jasmine sticky rice is also coloured by the water of a coloured cabbage, only this time, the red variety. The rice is available in two versions, the vegetarian (Rs 425), prepared with edamame beans and the non-vegetarian (Rs 525) that has a smoky flavour imparted by smoked chicken and wok-tossed egg white.

Flyin' high


Aviation sour

Distilling a promise to "send you to the stars", the Aviation sour (Rs 425) is a colourfully potent gin cocktail from the newly launched Donna Deli cafe at Bandra. The said gin is infused with blue butterfly pea tea from Thailand, with hints of elderflower and cherry infused liquor for flavour and kick. But what gives it a distinct Very Peri hue is a dash of lime juice that reacts with the butterfly pea tea to create an alchemy, and an almost instantly brilliant colour change.
