Zhimin Xu, associate professor at the Department of Food Science at Louisiana State University Agricultural Center, explained a September 1 ACS announcement, "Just a spoonful of black rice bran contains more health promoting anthocyanin antioxidants than are found in a spoonful of blueberries, but with less sugar and more fiber and vitamin E antioxidants.
"If berries are used to boost health, why not black rice and black rice bran? Especially, black rice bran would be a unique and economical material to increase consumption of health promoting antioxidants."
Black rice "is rich in anthocyanin antioxidants, substances that show promise for fighting heart disease, cancer, and other diseases."
Xu and his fellow researchers suggest that "breakfast cereals, beverages, cakes, cookies, and other foods" incorporate "black rice bran or the bran extracts" for added health benefits.
Until new functional foods are created with black rice bran, you may want to substitute black rice also known as forbidden rice (Lotus Foods Organic 425g bag $4.29/ 3.30; Emperors short-grained heirloom rice 370g $5.50/ 4.30) instead of white or brown rice.
