With every seasonal change come seasonal vegetables and fruits. As monsoon in Mumbai is marked by roasted corn, similarly winters are unimaginable without staple leafy vegetables such as fenugreek or mustard. Commonly available in the winters, mustard or sarson is a prominent ingredient across cuisines, from Punjabi to Bengali.
