Executive Chef Shailendra Kekade states that the focus will be on using ingredientsu00a0 that are in season like berries and turkey. The food is a la carte and includes Roasted Beetroot Soup with Kokum and Sour Cream, Chicken and Barley Winter Broth, Tiger Prawn Carpaccio with Smoked Oyster, Cheddar and Scallion Souffle, Roasted Red Snapper, Smoked Turkey and Chicken Cordon Bleu, House Smoked Duck Breast and Grilled Brazilian Tenderloin with Bourbon Sauce. Desserts will include Cherry Xmas Pudding, Whiskey and Honey Cranachan and plum cakes.
