Head to Zaman, the Indian fine dining restaurant at Ista and help yourself to traditional cuisine from Rajasthan, the land of mighty forts, ornate palaces and vibrant colours.


The Marwari food festival, Khamagani, designed by executive sous chef Manav Koul along with his team of Rajasthani chefs, has the famous gatte ki sabzi or gram flour dumplings cooked on a slow flame in a spiced yoghurt gravy; ker sanger or traditional Marwari beans soaked overnight and tempered with spices.

The ubiquitous dal bati choorma, a favourite especially during the monsoons, is a mu00e9lange of dals tempered in ghee. The batis are baked wheat flour balls roasted and mashed in melted ghee, best relished with jaggery, crushed nuts and castor sugar called churma.

On your traditional Marwari thali you will find a wide array of choices to savour, including a delightful selection of sweets cooked in pure ghee.

The melt-in-your-mouth desserts include a variety from exotic dried fruit dumplings popularly known as gund pak. Then, there'su00a0 badam lounj or rich almond milk cakes garnished with varq.

When: From June 19 to June 28, between 12.00 noon to 3 pm for lunch. Dinner options include thalis at Rs 575 and a special a la carte menu available at Zaman during the festival.
