This weekend, chefs Kelvin Cheung and Boo Kim will take over the kitchen of a hole-in-the-wall Bandra joint to stuff global flavours in modest ladi pavs

Over the Easter weekend, if you drop in at Pack-A-Pav, a tiny joint in Bandra that offers satiating home-style ladi pav sandwiches, you'll find chefs Kelvin Cheung and Boo Kim in the kitchen instead. Founder Rohan Mangalorkar has roped in the duo of One Street Over and Bastian fame for a three-day collaboration that marks the second edition of Pav With Friends. It's a special dining series where some of Mumbai's talented home cooks and chefs are invited to serve their signature versions of the pav sandwich at the joint.

"The idea was to showcase interesting collaborations because that's the way forward. We began the series last year with Saransh Goila, who served his signature butter chicken in a pav. While I had earlier thought of making it a monthly series, it didn't work out due to other commitments. This month marks our first anniversary, so I decided to bring out the second edition," says Mangalorkar, who plans to host the series every month henceforth.

Chefs Cheung and Kim have created four dishes for the limited-edition menu to present global flavours in the modest ladi pav. Cock A Doodle Boo comprises a pav stuffed with chicken, house-made ranch dressing and cabbage slaw.
Beet It, a veg option
The Burg comes packed with beef, caramelised onion and cheddar. Vegetarians can opt for Beet It, which includes a beetroot patty with spiced hummus and cheddar. They have also created a dessert, Ooh La La, which features French toast with salted caramel and milk crumbs. "They were excited when I shared the concept and happy to collaborate instead of feeling that they shouldn't be part of a store that's small," adds Mangalorkar.
For three days, the regular items, including bestsellers such as Mutton Shammi Pav, will go off the menu, which will only feature the chefs' creations. Moreover, the team plans to refrain from deliveries and offer only dine-in and takeaway options.
