Independence Day 2023: Indulge in a 14-course degustation menu at Tresind Mumbai in BKC

If you are looking to get out of your house and celebrate with food this Independence Day, then indulge in Trèsind Mumbai's 14-course degustation menu and bite into flavours, both famed and hidden treasures from across the Indian subcontinent. Curated by Chef Sarfaraz Ahmed, head chef at the restaurant, the menu will take you on a culinary journey that pays homage to the diversity of India. 
 
Drawing inspiration from beloved chaats, mithai, curries, and snacks from across India, each dish on the menu will take you on a culinary journey. Taking you to the vibrant streets of Kolkata is Tresind’s modernist take on the bun kebab with kosha mangsho in a tartlet made with lamb for non-vegetarians and raw banana for vegetarians, topped with shami kebab and finished with a baked bun. The kachaloo is reminiscent of the banks of Benaras, lanes of Lucknow and Kanpur. Traditionally made with potatoes, the restaurant's version introduces avocado filled with chickpeas and potato and moong sprouts and seasoned with mint chutney, yoghurt chutney and ajwain-tamarind chutney. The masterstroke is the ghewar, cooked in liquid nitrogen and placed on top of the dish - break it and devour each bite of crunchy, cool and refreshing sensation. Drawing influence from the south is Paniyaram with Parmesan Moilee made with semolina and chilli peppers, it awakens your palate and is balanced by a side of parmesan moilee - a parmesan-flavoured curry made with green chilli, kadi patta, and mustard seeds. For non-vegetarians, is the exquisite Scallop Wellington, paired with parmesan moilee. 


Bringing a refreshing break is the Khandvi ice cream with pickled papaya and chilli, it's refreshing, delectable and familiar. With love from Kerala is the aamras achappam with black lime chutney, a delightful creation that fuses the essence of Kerala with a touch of affection. Sun-kissed mango puree delicately encapsulated within a crisp, lacy embrace, complemented by the enigmatic allure of black lime chutney. The beloved Imarti makes an appearance through the Imarti waffle, a light and fluffy waffle made with Imarti. Paired with mango shrikhand espuma, strawberry & chilli ice cream, a dessert that transports your taste buds on a sweet, savoury and tangy journey.


The real showstopper, the restaurant says, with its gastronomic theatrics is the “Khichdi of India”, served as a part of the tasting menu, the simple rice and lentil-based khichdi arrives at the table accompanied by 20 little white bowls placed on a marble slab that in the shape of the map of India. The meal is then served with a side of culinary history, as the server reveals the story behind each ingredient and which state it hails from. And then, like a magic potion, all these ingredients are mixed into the base khichdi, amalgamating to produce a burst of flavour in your mouth.


Tresind's "Khichdi of India" is a tribute to the belief that food brings people together, which is prevalent in many cultures. The khichdi at Trèsind brings together 20 ingredients each representing a different part of India.
